Last July, our office door opened and in walked an effervescent stranger with a sparkle in her eye and a spring in her step. That day, Jackie M., joined our Golden Horizons family and has since proven herself a valuable member. According to Merriam-Webster Dictionary, colcannon, from the Irish cál ceannan, is a traditional Irish mashed potato dish. Literal translation: white-speckled cabbage. We’ve included a recipe below to help your celebrate!

Total Prep: 2 hr | Active Prep: 15 min | Yield: 6 servings
Ingredients: 3 lbs potatoes, scrubbed; 2 sticks butter; 1 1/4 c hot milk; freshly ground black pepper; 1 head cabbage, cored and finely shredded; 1 (1-lb) piece ham or bacon, cooked the day before; 4 scallions, finely chopped; chopped parsley leaves, for garnish
Directions: Steam potatoes in their skins for 30 min. Peel using knife and fork. Chop with knife before mashing. Mash thoroughly to remove all lumps. Add 1 stick butter in pieces. Gradually add hot milk, stirring all the time. Season with a few grinds of black pepper. Boil cabbage in unsalted water until it turns a darker color. Add 2 tbsps butter to tenderize. Cover with lid for 2 min. Thoroughly drain before returning to pan. Chop into small pieces. Next, put ham in large saucepan and cover with water. Bring to boil and simmer for 45 min until tender. Drain. Remove any fat and chop into small pieces. Add cabbage, scallions and ham to mashed potatoes, stirring gently. Serve in individual soup plates. Make indentation on top by swirling a wooden spoon. Put 1 tbsp of butter into each indentation. Sprinkle with parsley.

We have zero tolerance for any threatened, or actual, harassment or violence and we have safeguards and procedures in place to deal with incidents that arise.
